Portland, OR — Acadia Bistro chef/owner Seamus Foran is keeping the gumbo tradition alive for its fourth year in a row, presenting Gumbo Weekend Friday and Saturday, November 16 and 17, 2018.  In honor of the Treme Gumbo Festival in New Orleans, the restaurant will serve a flight of gumbos for guests to enjoys for a limited time.  The trio of gumbos include:

Seafood Gumbo – Acadia’s “go-to” gumbo and the version most popular in New Orleans, the dish is made with a dark roux, providing the depth of flavor that gumbo is known for, balanced by a combination of shellfish and chicken stock.  Acadia will serve its seafood gumbo with shrimp, crawfish and Louisiana blue crab.

Country Gumbo – This style of gumbo is from the southwestern region of Louisiana and is more of a thick tomato-based stew. Occasionally seafood will be included, but a more typical recipe (and the one chef Seamus will use) features chicken and andouille sausage.

Gumbo Z’herbs – This version of gumbo became popular with the Catholics in southern Louisiana. Served during the Lent, it traditionally contained no meat, though ironically it did involve a stock made from smoked ham hocks. Z’herbs is made with any kind of green leaf-like vegetable one can find: kale, mustard greens, collards, chards, turnip tops, carrot tops, beet tops, radish tops, cabbage, lettuces and spinach can all be used. As Lenten restrictions lightened in the past few generations, this dish lost popularity. But Seamus is happy to offer it to balance out the other heavier gumbos with a hit of vegetables.

Behind the bar, manager Dan DuFour has been busy creating fall cocktails fit for Portland’s cooler evenings. New drinks include:

“Brush Fire” – Vodka, citrus, ginger, soda, pomegranate and torched thyme

“Nothing Toulouse” – Peppercorn gin, cranberry cordial, lemon, sparkling wine

“Far from the Tree” – Apple brandy, creole bitters, ginger

PORTLAND, Ore. – One of Portland’s oldest and most time-honored St. Patrick’s Day parties returns at Jake’s Famous Crawfish on Thursday, March 17th.  Southwest 12th street between SW Stark and Burnside will be blocked off from noon to 9:30 p.m. as the party tents go up and bands arrive for the city’s best Irish party.

Rain or shine, the big tent outside of Jake’s will serve up Guinness beer, Jake’s Famous Irish Coffee, and a host of well drinks.  Revelers will relish seafood etouffee, clam chowder, Irish stew, corned beef sandwiches and a selection of savory meat pasties as they enjoy the live music.

Inside the restaurant, a roaming bagpipe band will serenade diners, who can partake in Jake’s full menu or a variety of specials, including Irish lamb stew, Scotch-braised salmon, corned beef and cabbage or bangers and mash.  Tickets for Jake’s St. Patrick’s Day street party are $10 per person at the door and restaurant reservations are now being accepted at (503) 226-1419.

Portland, OR – Mardi Gras comes early this February, ensuring that the winter blues and holiday hangover won’t be around for too long.  As is tradition, Acadia will put on a festive showing on Fat Tuesday, February 9, with a delicious Mardi Gras a prix fixe dinner menu showcasing chef Seamus Foran’s expertise in the Cajun kitchen.

Featured dishes include:

  • Crawfish Deviled Egg with celery root remoulade and Belgian endive
  • Crab Cakes “Rex” with frisée and hollandaise
  • Braised Pork Cheeks with Old School grits and cane syrup gastrique
  • House-made King Cake with cream cheese icing (Find a baby in the cake and win a $50 gift certificate!)

Dinner is $45 per person without gratuity. The regular a la carte dinner menu will also be available.  Bar director Charles Campos will complement the fare with cocktail classics from the Big Easy, or a fancy concoction from the staggering 114-bottle Bourbon list and the biggest absinthe selection in town.
