Camas, WA — It’s hard to believe, but Grains of Wrath turns one this week, and they’re celebrating Saturday with a new release of a Triple IPA called “Spoils of War.” The celebration lasts from 3-10 pm on Saturday with some fun event food, and the launch of their new Mug Club.

“We’re also releasing our first wild beer, which is a sour beer, using a wild yeast,” said co-owner Mike Hunsaker. It’s a barrel-aged Belgian style quad, aged in a Pinot Noir barrel with Cape Blanco cranberries. We also have an Imperial Stout aged in rum barrels, and we’re releasing a new shirt.”

In the 12 months since their launch, Grains has released 50 beers, won some distinguished awards, and is increasing their own brand distribution.

Greenen said IPA’s are most popular, and laugers are making a big comeback.

“Like any small business, it can be tough,” said co-owner Brendan Greenen. “Our crew has learned a lot about our customers, and we’ve learned how to react faster to change. I’d say our biggest surprise has been figuring out to increase exposure and traffic on weekdays, but we’re still new and Camas is still learning about us.”

They take pride in their brewpub, and the product made right in Mill Town.

“Our greatest successes are the quality of the beer, winning several awards,” said Hunsaker. “The very first beer in the system took a gold medal at the Great American Beer Festival — out of four entries we won a medal, and we were super proud about that.”

Customers also rave about the food, especially the GOW burger, which is house-ground with brisket in a half-pound patty. It’s popular along with the Fried Chicken sandwich.

“It’s been great,” said Greenen. “We’ve been proud of the offerings and the service. There are always missteps with food or service issues, but they’ve been pretty minimal. We have a good team with 32 people right now, and it grows in the summer. Erin LeDoux and Joel Schmidt are the chefs.”

“Looking ahead — I think our goal for year two is to continue to grow our regular customer base and market Grains of Wrath to be a gathering place. We’re also increasing our distribution spread by self-distributing to other bars and pubs. It’s mostly about increasing the exposure. It’s about controlling the amount of beer so that we don’t lose control of the quality. Don’t want to lose sight of what we’re here for.”

They’ll also be encouraging more events, for example, 100 Women Who Care Clark County holds their quarterly meeting, and they hosted the Small Business Revolution reception in January.

“Camas has been really good to us,” said Hunsaker. “We’re consistent. This downtown is such a wonderful downtown. Keep people here. Keep coming.”

Nuestra Mesa — Downtown Camas

Dining
Nuestra Mesa’s salmon entree is prepared using Ora King Salmon.

The Nuestra Mesa salmon entree is prepared using Ora King Salmon. Ora King Salmon is sustainably raised in New Zealand in the purest waters of the world, utilizing the Salmons natural habits, the Salmon is raised the closest to their wild habitat. Because of the purity of the water and the algea present, it allows the salmon to have the beautiful rich pink color that we look for when ordering a salmon. It also means that the salmon has an incredibly low mercury content allowing it to be safe for everyone to enjoy!

A few months ago, Nuestra Mesa decided to revamp their menu to focus more on farm to table, fresh ingredients from local farmers and staying true to that small business mentality. As you may have known, a few months ago we acquired a new head chef and he has been doing some incredible things for Mesa.

The result is 14 amazing new menu options, which includes three new platillos pequenos (starters), three new enseladas (salads), a new sopa (soup), one new taco, and six stunning new platillos fuertes (entrees).

We sampled the Ceviche, with wild shrimp and calamari cured in a lime tomatillo vinaigrette, derived with grilled tomatillo and tomato, pickled red onion, jalapeño, chile oil, and micro cilantro.

We also tried the Macienda Blue Corn Huraches, with rewrites, foraged mushrooms, arugula, avocado, guajillo salsa, topped with micro cilantro, and it’s served on a house made macienda blue corn cake! It’s so delicious!

And, our final sample was the Crisp Bruselas (Brussel Sprouts),which is served with chorizo, poached egg, house made chic harmonies, and topped with tajin. This is a complete change from their previous brussel sprouts recipe.

Located at 228 NE 4th Avenue, in Downtown Camas, Mesa offers gourmet Mexican cuisine. It’s a family friendly location.

Truffles

Truffle lovers have a new place to visit: Navidi’s Olive Oils and Vinegars in Downtown Camas.

This week, we feature Portland’s Farm Spirit. Modernist plant-based restaurant Farm Spirit is now open for dinner at the new 1403 SE Belmont Street location with owner Aaron Adams as head chef. The set multi-course menu features vegetable cookery of the Cascadia region, all sourced from within 105 miles of the restaurant.

While Farm Spirit is often categorized as vegan fine dining, Adams insists that the restaurant not to be taken too seriously. No preaching, no pretension here. Only eclectic and inventive vegan cuisine now served in a full-sized, 30-seat restaurant, expanded from the former 14-seat chef counter.

“Coming back as chef, I put a lot of my personality in the space. My cuisine style and mission are still firmly intact – I just want to connect people to this incredible region in a way that they may not have experienced before, whether they are vegan or not,” says Adams. Case in point: a life-sized framed photograph of Adams’ dog, Dash, bedecked in a bow tie, greets visitors to the bathroom.

Farm Spirit gained recognition after its opening in 2015 by playing with the expected norms of modernist dining, sometimes coloring in the lines, sometimes scribbling over them. In the new space, servers begin the meal with table-side snacks served from a gueridon, reminding guests they are always welcome to lick their plates. “Butter” for bread may be served in a small the cover of a small cloche terrarium, with smoke released once the cover is lifted. A course of squash fritters may be served in child-size cast iron frying pans. Guests enjoy the strums of folksy acoustic guitar music during one part of the meal, a ‘60s Motown hit the next.

Adams constantly tinkers with the ever-changing menu according to the produce sourced from local farms and farmer’s markets. Once ingredients are brought in-house, Adams and his team experiment with textures and flavors with the help of the new freeze drier, pasta extruder, centrifuge, dehydrators, and temperature-controlled fermentation cabinets. The opening winter menu includes:

Wild rice sourdough bread
First press rapeseed spread

Snacks (served tableside)
Carrot jerky
Winter roll with borage butter
Seeded cracker, cultured filbert, smoked beet
Kale chips, ferments
Nixtamalized barley, abalone mushroom, green tomato preserve

Dining

Carrot Jerky. Nikki Unger-Fink

Courses
Potato Salad – roast fingerlings, mustards, onion cream
Brussels – wilted leaves, winter squash and filbert dressing, black garlic, pepitas, fermented sunflower
Ravioli – mushrooms, roast carrot and parsley root, nourishing broth, bay laurel oil
Celeriac – grilled over charcoal with huckleberry glaze, char sauce, savoy, vegetable cream
Malted Potato – puree, salted ice cream, black Oregon truffles

Dessert
Apple – roast apple and apple cake, frozen vanilla yogurt mousse, chamomile “honey”
Tea Snacks – bon bon, cookie, candy

The 1,000-square-foot restaurant’s aesthetic honors the Cascadia region with an “outside-in” décor and design elements from local craftspeople. The fog-colored walls serve as a tranquil backdrop for the hanging natural artifacts by Metal and Moss. The custom bar, tabletops, and wood paneling are all fashioned from white oak from Neu Wave. Hand-made ceramic dinnerware is from Kelly Pottery and Alexandria Cummings.

Farm Spirit is open Wednesday to Saturday, with dining room seating starting at 5:30 p.m. and chef’s counter seating at 7 pm. Dinner service includes 6 or more courses, plus snacks and surprises for $89. The Chef’s Counter Cascadian Tasting Menu experience is $109 and features several additional courses for the more adventurous diner. Dinners are reserved and pre-paid online exclusively via TOCK. Farm Spirit is a gratuity-free restaurant.

NUESTRA MESA — Downtown Camas

Dining

A new menu is coming to Mesa.

For the duration of winter we will be closed on Sundays. Our hours during the week will be Monday thru Thursday from 11:30am-9pm and Friday and Saturday from 11:30 am-10 pm.

A few months ago we decided that we wanted to revamp Mesa a little bit. Focusing more on farm to table, fresh ingredients from local farmers and staying true to that small business mentality. As you may have known, a few months ago we acquired a new head chef and he has been doing some incredible things for Mesa;  working with local purveyors in the area for us to have more local produce and meats, as well as taking time to revamp our dinner menu to offer entrees that are focused on seasonality. We will be closed to the public on January 1st and 2nd (we will be doing full kitchen and front of house staff training ), we will re-open on Thursday evening at 5 pm-9 pm for a soft menu relaunch. We are relaunching our full new dinner menu with tequila pairings (as well as a new winter cocktail menu) on January 4th for 1st Friday. We will be open normal hours that day.

Located at 228 NE 4th Avenue, in Downtown Camas, Mesa offers gourmet Mexican cuisine. It’s a family friendly location.

ACADIA BISTRO — Portland

Dining

Acadia’s Bread Pudding. Photo by Aubrie LeGault.

Once again, Acadia Bistro chef/owner Seamus Foran is continuing the restaurant’s long-standing tradition of hosting Christmas Eve Réveillion Dinner and a rousing New Year’s Eve. Derived from the 18th century Creole tradition, “réveillon” comes from the French word for “awakening” and refers to a late night/early morning meal served after midnight mass on Christmas Eve. Hungry families returning from church services would feast on a sumptuous meal that had been laid out in advance. Acadia has been hosting a Réveillion Dinner since 2004 and remains a popular option for diners who want to enjoy time out with family and friends, without getting the kitchen dirty.

For both evenings, the set menus consist of four courses of traditional Cajun and Creole dishes, as well as updated classics.  Acadia’s Réveillion Dinner will be served from 5 pm to 10 pm on Monday, December 24th.  The cost is $75 per guest, and reservations are strongly recommended.

Located in the Sabin/Irvington neighborhood of Portland, Acadia has been serving modern American cuisine rooted in Louisiana food traditions since 2001.  The restaurant uses locally-grown fruits, vegetables and meats, as well as exclusively wild caught seafood from the Gulf coast and Pacific Northwest.

Located at 1303 NE Fremont St. in Portland.
