Tamale Festival lovers — this is for you! The Southwest Washington Tamale Festival is returning to downtown Washougal on Saturday, June 29, 2019 from 1 to 9 p.m. Presented by the Southwest Washington League of United Latin American Citizens (SW WA LULAC Council 47013), the family-friendly event will celebrate the richness of Latin culture and is free and open to the public. It will be held in Reflection Plaza located at Main St & Pendleton Way, Washougal.
The history of the tamale is as old as the Aztec and Mayan cultures and played a significant role as a food staple that traveled well. Becoming a traditional food for celebrations in more modern times, they are now an important part of Central and North American indigenous culture.
“We are very excited to host the second annual SW WA Tamale Festival in partnership with the City of Washougal,” said Hector Hinojosa, SW WA LULAC Council president and festival organizer. “It will be wonderful to share our heritage with the community through delicious foods, a beer garden, exciting music and dance entertainment, tamale cooking and eating contests, a children’s activity area, information booths from local businesses and organizations and handmade crafts for sale.”
Last year’s festival was overwhelmed by large attendance and suffered long lines to purchase tamales. “This year we will have many more food vendors so lines will be shorter and there will be plenty of tamales for everyone,” Hinojosa assured. “In addition, pre-orders for frozen tamales to take home with you will be available for pick up at the festival.” Orders must be placed online at www.swwatamalefest.com. There is a June 10 deadline for tamale pre-orders and all must be picked up during regular festival hours. Act now!
“There is an amazing line up of musical and dancing entertainment for the festival,” said Monica Rech, festival entertainment coordinator. “One of a Kind Drumline starts everything off with a dynamic performance at 1:00pm. Son de Cuba Quartette will perform at 3 pm and then again at 3:50 pm. Gerardo Calderon will be playing traditional Mexican/South American/Peruvian folk music starting at 6:30 pm.
Throughout the afternoon beautifully costumed and energetic dance groups will also perform. “We have several Middle Eastern dance groups performing six to eight-minute routines each,” said Rech. “They will feature traditional dances from Turkey, Morocco, Egypt, Saudi Arabia, Persia. There will be dances from Vancouver Ballet Folklorico and Flamenco/Belly Dance Fusion as well.”
Adding to the fun, the event will feature a tamale contest that is open to restaurants and homestyle cooks.
“We are inviting contestants to show off their tamale cooking skills,” said Hinojosa. “Tamale recipes are a big source of pride among families. The tamale contest will be a lot of fun and give some bragging rights to the winners!” Entries will be judged by a celebrity panel in three categories; Meat, No-Meat/Veggie and Sweet/Dessert. Winners will be determined based on taste, technique, appearance and overall quality. A $100 prize will be awarded for the winning entries. For contest rules and entry form, go to the event website. There is a $20 entry fee per category. The deadline to enter is June 10, 2019.
Are you hungry for tamales? You may want to enter the Tamale Eating Contest sponsored by Javier Navarro, State Farm Insurance. The challenge will be to consume as many tamales as possible in two minutes. Contest will be limited to the first 10 participants to register, 18 and over only. Registration is $20 and can be done online on the event website. Prizes provided by Navarro are $200 for first place, $50 for second place and $25 for third place.

Welcome to our Weekly Food + Dining Guide! This week, our cover story is Alex Smokehouse, which is located in downtown Washougal.
Sharing space with Logsdon Farmhouse Ales in downtown Washougal, Alex Smokehouse specializes in smoked meats — wings, ribs, brisket, as well as salmon.
“We’re very proud of what we do here,” says owner, Alex Ramirez. “We love preparing the smoked meats and salmon. The menu is diverse because we listen to our customers and serve what they like. Every weekend I put out a special, and if they become really popular we put them on the menu.”
“They come here for the smoked meats — the wings, ribs, brisket, and salmon is very popular. These are very heavy meals, and I’ve worked trying to find balance to have something for everyone, so I came up with the salads.”
Alex Smokehouse offers eight salads, which can be enhanced with smoked chicken or salmon. People love them! Their sandwiches include pulled pork, smoked chicken, pulled beef brisket, and smoked turkey — that come with your side choice of cornbread, kettle chips, roasted potatoes, slaw, seasonal veggies or mashed potatoes.
Starters include smoked hot wings, ceviche, guacamole and chips, bar snacks, empanadas, smoked house nachos, pizza, sliders, truffle mac, and chipotle chicken Mac. And, they have have daily specials.
“My background is I started cooking in 1997 in NW Portland at Sammy’s Restaurant and Bar, then I moved to Milo City Café at Broadway and I worked there for about seven years,” said Ramirez. “Then, I found my passion with cooking and smoking, and moved to Clay’s Smokehouse, where I was the head chef for eight years, then I decided to work in fine dining at Oyster Bar and Grill on Alberta. Then I moved to Por que No, which is a taqueria in Portland at 48 and Hawthorne and worked there for two years.”
Eventually, he ventured on his own, started with two food carts in Portland, moved from Portland to Washougal and decided he could rent the space where he’s at today. Alex Smokehouse was born in 2014. Stop by and see what they’re all about.

Welcome to our Weekly Food + Dining Guide! This week we feature Hello Waffle Cart, which serves sweet and savory waffles at a drive-thru in Camas, and is a favorite at Farmer’s Markets and events throughout the area.
Waffle plates are growing in popularity and new options are being created to tempt your taste buds. Like the Caprese Waffle, in the cover photo. It’s a savory waffle with fresh mozzarella, pesto aioli, tomato, arugula, balsamic drippings, and makes for a fantastic meal!
“We have turkey sandwiches and people are impressed,” says co-owner, Linda Cameron, who purchased Hello Waffle last October with her husband, Will. “We cook the savory ones with bacon. Most product we have is 100 percent fresh, and the other things like bacon are pre-cooked.”
Hello Waffle recently introduced a ham and cheese waffle, which are both cooked inside the waffle and served with a side of tomato soup. They also just added a chicken waffle. Delicious!
On Saturday, their busiest day of the week, they run two drive-thru’s so you can get your waffle pretty quickly, and if you add a drink it’s just a 5-7 minute wait. You can order up to five waffles at the same time.
And you have 11 waffle plates from which to choose. Their best sellers are the fresh fruit (strawberry), Nutella banana and on savory side, the turkey sandwich and caprese. They also offer gluten free.
It’s all made from scratch.
They are currently at Vancouver Farmer’s Market, and will be back at Camas Farmer’s Market soon. They do school events, and will be at Prune Hill Elementary School, the Ilahee Elementary School carnival, at Grass Valley Elementary, and also at Shahala Middle School on May 15.
“I’ve been in the business for almost 30 years working in restaurants and I always wanted to open a restaurant,” said Cameron. “We got it going. I love food. I love serving customers. When customers see the final product they’re amazed. People get excited to see what we make.”

Washougal, WA — The former Heller’s, long a staple of Washougal, is now Washougal Times.
The new owner, Ben Jackson, took ownership on January 2, and he and his team have spent considerable time and money renovating the space.
Their grand opening is this weekend, April 12-14. Friday and Saturday nights will be filled live music, by Train River Blue Grass, which is a 4-piece band from 7:30-10 pm. They’ll have a customized menu for a large volume of people with over a dozen choices.
“We’re an ode to the community and the history of the community,” said Jackson. “After spending time in the 2 Rivers Heritage Museum we have gone back to 1890 to 50 years ago, and we’re showing the rich history. We’ve had a lot of people come in and identify people — there’s my mom and there’s my dad, and they’ve given me more photos of the history.”
“There is plenty of room on the walls for more times to come. The business is about something for everyone in the community. Something for kids, for families. Heller’s legacy is strong. Their 40-plus years of business they did was something else. Also, trying to make sure we offer up new things, but maintain some of that old feel of what Heller’s was because it was great. That’s why we do Prime Rib on Friday’s and Saturday’s, that’s why we have the Heller’s sign up.”
Food wise, Washougal Times is simply American done well. It’s splashed in with Pacific NW ingredients with burgers, BLT’s, meatloaf specials, Copper River Salmon, fresher ingredients that are all around us. It’s about looking at what the community needs, so they’ve create menus around that. Then as the community changes the menu will change, as well.
“We want to make sure we’re paying attention,” said Jackson. “We offer comment cards with each guest and chat with them about their experience. We don’t want people walking out the door unhappy. What can we do to make that right?”
The symbol that’s above the restaurant represents rushing water, which is why it’s in blue. Washougal Times is all about the community and the history and the times of this area.
“On the marquee we have the slogan drink, eat, repeat,” said Jackson. “Come visit.”

“We’re also releasing our first wild beer, which is a sour beer, using a wild yeast,” said co-owner Mike Hunsaker. It’s a barrel-aged Belgian style quad, aged in a Pinot Noir barrel with Cape Blanco cranberries. We also have an Imperial Stout aged in rum barrels, and we’re releasing a new shirt.”
In the 12 months since their launch, Grains has released 50 beers, won some distinguished awards, and is increasing their own brand distribution.

It also means that the salmon has an incredibly low mercury content allowing it to be safe for everyone to enjoy!

Washougal, WA — Eight Washougal elementary students put their culinary skills to the test at Sodexo’s Future Chefs Challenge at Washougal High School on Wednesday, March 6. This year’s theme was healthy and delicious Mexican food.
Elementary students across the district submitted recipes and these eight were selected to participate in the cooking event. The student creations were judged on criteria such as originality, taste, presentation, and use of healthy ingredients. The finalists prepared and presented their recipes with the help of WHS culinary students and Sodexo staff.
Although all entries were winners having been selected from a larger number of recipes entered, taking first place was Skylar Stotts from Columbia River Gorge Elementary for his Pineapple Guacamole. Second place went to Wylie Gibson of Hathaway Elementary with her Wild Goose Fajitas.
Other competitors were, from Hathaway, Charolotte Bisila who made Taco Salad, Abigal Picho created Tostados and Cody Jacobus built a Chicken Enchilada Casserole. Mari-Jayne Kephart from Cape Horn-Skye made her Fabulous Mexican Rice. From Gause Elementary Kamea Roy made Nacho Chicken Nachos and Joselyn Guajardo created Ensalades de Frijol Negro y Mango.
Jacobus explained that his recipe for Chicken Enchilada Casserole came from his mother. “I’ve been practicing making it since I heard about this competition,” he said. “The secret is five layers of goodness with tortillas, sauce, chicken and cheese.”
“I didn’t have to do much at all to help,” said WHS culinary student, Mason Meeks, who assisted Jacobus. “He actually taught me how to make it. I have never seen enchiladas fixed this way.” Meek, a senior, took the culinary class for fun and plans to be a pilot.
“This was one of the hardest jobs I had to do all day,” admitted Mary Templeton, WSD Superintendent who was a judge in the contest. “I am so impressed with the creativity and innovation the kids are showing. And they are taking this work seriously and are being very professional. I love seeing them demonstrate many of the 21st century skills we are working to teach in our classrooms.”
Templeton also appreciated the healthy aspect of the recipes “Fresh vegetables, lean meats, and full of flavor,” she said. “In a word, delicious!”

The result is 14 amazing new menu options, which includes three new platillos pequenos (starters), three new enseladas (salads), a new sopa (soup), one new taco, and six stunning new platillos fuertes (entrees).
We sampled the Ceviche, with wild shrimp and calamari cured in a lime tomatillo vinaigrette, derived with grilled tomatillo and tomato, pickled red onion, jalapeño, chile oil, and micro cilantro.
We also tried the Macienda Blue Corn Huraches, with rewrites, foraged mushrooms, arugula, avocado, guajillo salsa, topped with micro cilantro, and it’s served on a house made macienda blue corn cake! It’s so delicious!
And, our final sample was the Crisp Bruselas (Brussel Sprouts),which is served with chorizo, poached egg, house made chic harmonies, and topped with tajin. This is a complete change from their previous brussel sprouts recipe.

It’s hard to believe, but Grains of Wrath just turned ONE this week, and they celebrated Saturday with a new release of a Triple IPA called “Spoils of War.” They also just launched their new Mug Club.
“We’re also releasing our first wild beer, which is a sour beer, using a wild yeast,” said co-owner Mike Hunsaker. It’s a barrel-aged Belgian style quad, aged in a Pinot Noir barrel with Cape Blanco cranberries. We also have an Imperial Stout aged in rum barrels, and we’re releasing a new shirt.”
In the 12 months since their launch, Grains has released 50 beers, won some distinguished awards, and is increasing their own brand distribution.
