The Nuestra Mesa salmon entree is prepared using Ora King Salmon. Ora King Salmon is sustainably raised in New Zealand in the purest waters of the world, utilizing the Salmons natural habits, the Salmon is raised the closest to their wild habitat. Because of the purity of the water and the algea present, it allows the salmon to have the beautiful rich pink color that we look for when ordering a salmon.
